Whole Grade A Madagascan vanilla pods, hand-graded for oil content and pliability — dark, supple, and fragrant enough to knot around a finger without cracking. Every pod is cured using the traditional Madagascan method, which is what gives real vanilla its depth: green beans are blanched, sweated, and sun-dried in cycles over months, slowly developing the vanillin crystals and rounded aroma that flash-cured or synthetic vanilla can't match. Pods are the most versatile format we sell — split and scrape the seeds for a custard or ice cream base, steep a whole pod in warm cream or spirits, or use a spent pod to flavour a jar of sugar. Bundles and gift packs mix our two grades (Large and Medium) for cooks who want a stock to draw from rather than a single size.

Our Large Grade A Madagascan vanilla pods are the top of the grading range — noticeably longer and heavier than our Medium pods, with a deeper, more concentrated seed cavity. They're graded on oil content and pliability first: a Large pod should be dark, slightly glossy, and flexible enough to wrap around a finger without snapping. That oil content is where the flavour actually lives, so a Large pod delivers a fuller, rounder vanilla character than a smaller bean of the same age. They pair naturally with our vanilla extract and paste ranges for kitchens that want the whole-pod option alongside a faster liquid or paste format.

Our Medium Grade A Madagascan vanilla pods are the everyday grading — a size down from Large, still dark, oily and pliable, just a shorter pod with a slightly lighter seed yield. For most home baking and everyday cooking the difference between Medium and Large comes down to seed volume rather than flavour intensity, which makes Medium the practical choice for recipes that don't need a maximum-strength pod. They're sold individually, in fixed bundles, and as wholesale trade packs for kitchens working through higher volumes.
